Vanilla Eggy Bread If You Want To Enjoy In Your Breakfast!!!
4 large eggs
4 tbsp double cream
2 tbsp sunflower oil
8 slices of white bread (day old)
Vanilla caster sugar, to sprinkle
1-2 peaches, stoned and sliced (or other fruit)
150g (5oz) Greek yogurt
- Lightly whisk the eggs with the cream in a shallow dish. Heat the oil in a large frying pan.
- Cook the eggy bread two or three slices at a time. Dip the bread into the creamy egg mixture and turn to coat, then fry in the hot oil for 2-3 minutes on each side until golden. Remove and keep warm while you cook the rest.
- Sprinkle each slice of eggy bread with vanilla sugar. Serve at once, topped with peach slices or other fresh fruit and a generous dollop of yogurt.
I adore this breakfast. Keep a vanilla pod in a jar of caster sugar and you will always have fragrant vanilla sugar to hand.
