Vanilla Eggy Bread If You Want To Enjoy In Your Breakfast!!!

Needed ingredients:

Serves 4

4 large eggs

4 tbsp double cream

2 tbsp sunflower oil

8 slices of white bread (day old)

To serve:

Vanilla caster sugar, to sprinkle

1-2 peaches, stoned and sliced (or other fruit)

150g (5oz) Greek yogurt

Preparation:

  1. Lightly whisk the eggs with the cream in a shallow dish. Heat the oil in a large frying pan.
  2. Cook the eggy bread  two or three slices at a time. Dip the bread into the creamy egg mixture and turn to coat, then fry in the hot oil for 2-3 minutes on each side until golden. Remove and keep warm while you cook the rest.
  3. Sprinkle each slice of eggy bread with vanilla sugar. Serve at once, topped with peach slices or other fresh fruit and a generous dollop of yogurt.

I adore this breakfast. Keep a vanilla pod in a jar of caster sugar and you will always have fragrant vanilla sugar to hand.
