Take One Moment And Make This Irresistible Snowy Saffron Peaches!!!
50g (2oz) butter
6 large, ripe peaches, halved
1 tbsp roughly chopped pistachio nuts
65g (2 ½ oz) caster sugar
Small pinch of saffron threads
- Preheat the oven to 2000C (fan oven 1800C), gas mark 6. Melt the butter in a small roasting tin in the oven, then put in the peach halves in one layer. Scatter in the nuts. Roast 25 minutes, turning from time to time, until the peaches are tender and golden.
- Meanwhile, whiz the caster sugar with the saffron in a mini chopper or blender until well blended. Whisk the egg whit in a clean bowl to stiff peaks, then gradually whisk in the saffron sugar to make a firm, glossy meringue.
- Turn the peach halves hollow side up. Spoon a peak of meringue on top of each one. Return to the oven to bake for 5 minutes until lightly tinged with brown. Serve hot, with the pan juices drizzled round.
Roasting really brings out the natural sweetness of ripe peaches. The snowy saffron meringues finish them off with a stylish flourish. You may serve with vanilla ice cream.
